そばは栄養豊富な穀類で、たんぱく質やビタミン類、食物繊維を豊富に含んでいます。特にフラボノイドの一種ルチンは、血管を強化や血流を改善する働きがあり、高血圧の予防や動脈硬化の抑制に効果が期待できます。ビタミンCの吸収を助けるため、美肌づくりにもおすすめの食材です。
